Etxeko Ibiza by Martín Berasategui, with a Michelin Star and directed by chef Paco Budia, presents its new menu for the 2023 season

Etxeko Ibiza, the restaurant of Martín Berasategui in Ibiza, located in BLESS Hotel Ibiza y winner of a Michelin Star, faces this 2023 season with a new letter in which it continues to bet on a return to the origins, merging the most sublime products of the Cantabrian and Mediterranean to experience the island flavors, without losing the essence of your kitchen.

A reinterpretation of the Basque gastronomy with the leading role of the best island products under the direction of the executive chef paco budia, Berasategui's right-hand man on the island.

A whole trip that can be enjoyed through its exceptional tasting menu, which includes products from both areas such as sea ​​bass or Basque chilli sparkling wine accompanied served.

El tasting menu for this Season 2023 It is divided into different countries, among which are Berasategui classics that have brought him worldwide fame, such as the 'Snacks' among which is the 'Liquid ham and truffle omelette', wave 'Hake in tempura with an amontillado and caviar mayonnaise'. The letter continues with 'The Etxeko salad'The'From the estuary to the orchard', Norway lobster carpaccio on an emulsified background of textured fennel.

We also find delicacies from the sea such as 'The ocean’, braised wild sea bass with a seaweed smoothie, scallop iodized and cauliflower couscous, and meats such as 'The tradition’, rack of suckling lamb with its juice, wild mushrooms, black agliata and acidulated lactic nuances, or 'The Dehesa’, smoked Iberian pork slice, light touches of oyster tarama and ice cream with mustard, among others.

The new letter was presented at an event last May 11th 2023 which was attended by his own Martin Bersategui and the collaboration of Count of Montaigne, Prestige House of Champagne, ambassador of authentic Aube champagne.

El tasting menu of this season has a price of $175. The restaurant open every night, except Tuesdays, from 19:30 p.m. to 1 a.m. in the privileged location on the ground floor of BLESS Hotel Ibiza, in Cala Nova.
