The first ones are a kind of focaccia made with wholemeal flour and three fermentations (biga, idrolisi and mother yeast) that we advise you to try. The result of the mixture is a super crispy dough with a spongy interior texture like a cloud. The second ones, the fried ones, are a type of fried pizza dough with tomato, mozzarella and Parma ham. They also make fried and stuffed zucchini flowers.
